My Raspberry Chocolate Cheesecake

I'm baking again today for my sister's 17th birthday celebration. I decided to make Raspberry chocolate cheesecake cause I had left over raspberry in the freezer.

I adapted the recipe from Taste Of Home.

1.5 cup digestive biscuit
1/4 stick butter
1kg cream cheese
1.25 cup sugar
200g sour cream
1 teasponn vanilla extract
3 eggs
9 ounce semisweet chocolate
1/2 cup seedless raspberry preserves

My house ran out of chocolate and I forgot to buy so I replaced them using cocoa powder, sugar and butter.


Lined my tin with baking paper

crushed the cookies between baking paper 

add in the melted butter


mix properly!


and press then to form the base
i baked the base for about 10 min at 150 degree Celsius
my pan is dark coloured, so I adjusted the temperature 


CREAM CHEESE! 
I mixed two different type to make up 1 kg

Cut them up and then cream them before adding the sugar


It looks creamy! 

Add in the sour cream, vanilla extract and beat 
 then the eggs (beat at low speed) 

after this point I was too occupied with the chocolate ><
So take 1.5 cup of the above mixture and add in the melted chocolate
stir and mix well 

Pour the remaining batter into the pan. 
Spoon the chocolate mixture as small spots on the surface. 

THE FUN PART!
I took a toothpick and swirl. heez. 



I baked it at 150 degree Celsius for 1 hour with a water bath. 
DONE!
Refrigerating it overnight and its good to eat.  ^^

Anyways, the recipe that was listed was way too much for m 9 inch pan
so next time I will cut down to half.
I made two cakes with that.
